Soak overnight, then cover with fresh boiling water, boil for at least 20 – 25 mins (or longer if you want them softer)
Basically, if the inside is yellow and soft, they are cooked. If not, the centre of the chickpeas will be white and starchy.
If so, cook for a further 5 mins, then check once more. Repeat if necessary
